Chesapeake Fried Tomatoes

8 plum tomatoes
Crab boil seasoning
Cornmeal

Wash and slice tomatoes crosswise into 3/8-inch thick rounds. Preferably in a non-stick pan, add a scant tablespoon of vegetable oil and fill with the sliced tomatoes. Sprinkle the seasoning on the top side, then sprinkle the cornmeal on the tomato. Turn and saute, over medium heat until crisp. Before turning, add the seasoning and cornmeal to the other side and crisp again. If plum tomatoes are not handy and you use ripe, round tomatoes, add a pinch of sugar to balance the acidity. Use more sugar with green tomatoes. Serves 4-6.
