DIET ORDERING/CANCELLATION

 

I. PURPOSE:

To assure veteran home residents receive the correct diet as indicated by the staff physician.

II. PROCEDURE:

A. Staff Responsibilities:
 
 

1. Physician:

 

a. Will prescribe diet in the resident's medical record.
b. All modified and therapeutic diets must be renewed every thirty (30) days. If there is a change of diet, the Clinical Dietitian and Food Service Department will be notified. Any change of diet must appear as a written order in the resident's medical record. A diet change must be specific. (Due to the natural process of aging, regular ground diets prescribed, because of lack of dentition, shall be viewed as regular diets and will not have to be renewed every thirty (30) days.)

 
 

2. Nursing:

 

a. Diet Communication Slips must show the resident's name, room, diet and date. Copies must be submitted to the Clinical Dietitian and the Food Service Department.
b. When a resident is discharged, the Nursing Staff must send a Diet Communication Slip to the Clinical Dietitian and the Food Service Department.

 
 

3. Dietitian:

 

a. Will be notified of the diet and/or diet changes through the diet information mechanism which is determined by the facility.
b. After notification, diet confirmation will be made within seventy-two (72) hours and noted in the medical record.
c. Translation of diet will be made and the proper diet information will be sent to the Food Service Department.
d. In cancellation of a diet, Dietitian will make note in the Medical Record and follow up with Food Service.

 
 

4. Food Service Department:

 

a. Diets will commence at the meal which follows receipt of the Diet Communication Slip or verbal instruction from the Dietitian or Nursing.
b. Will assure that the residents receive correct diets.
c. The diet information cards are used to designate the various diets.


The diets are as follows: Regular/Bland/Low Sodium/Diabetic
