FOOD STORAGE
POLICY STATEMENT.
The Division of Veterans Healthcare Services (DVHS) requires each of the New Jersey Veterans Memorial Homes (VMH) to develop and implement protocols that ensure food products/items are stored appropriately to avoid spoilage or losses of food products/items.
PURPOSE.
This policy and procedure shall serve to ensure that areas designated by the New Jersey Veterans Memorial Homes for the purpose of storing food products/items, are utilized in the appropriate manner to avoid spoilage or losses of food products/items.
PROCEDURE.

The New Jersey Veterans Memorial Homes shall establish protocols that assure areas designated for the storage of food products/items are utilized in the appropriate manner to avoid spoilage or losses of food products/items.

Storeroom

Containers of food will be stored above the floor on clean racks, dollies, or other surfaces in a manner that protects the item from splashes and contamination.

Food in storage must be elevated six inches above the floor, and appropriate aisles must be maintained between items in storage to allow unobstructed egress.

Food in bulk storage will be stored at least twelve inches from all walls.

Food in bulk storage will be stored not closer than eighteen inches from the ceiling.

All food products will be identified and must show date of receipt.

A “first-in-first-out” system of issuing food must be used to ensure freshness. (Products must be rotated.)

All dented, bulging, crushed and badly rusted cans must be separated from stock and discarded.
