SUBSTITUTE FOODS AND BEVERAGES

 

POLICY STATEMENT.

The Division of Veterans Healthcare Services (DVHS) requires each of the New Jersey Veterans Memorial Homes (VMH) to establish a dietary/meal service program that offers substitute foods and beverages, equal in nutritional value to the main entrée planned in advance, for those VMH residents who elect not to eat the main entrée.

PURPOSE.

This policy and procedure shall serve to ensure VMH residents who elect not to eat the main entrée are afforded substitute foods and beverages of equal nutritional value.

PROCEDURE.

  1. New Jersey Veterans Memorial Homes

    1. The New Jersey Veterans Memorial Homes shall establish protocols that assure substitute foods and beverages of equal nutritional values are planned in advance, posted on the menu, and readily available for those residents who elect not to eat the main entrée.

  2. Food Services Department

    1. Alternate substitute foods and beverages of equal nutritional value to the main entrée will be planned in advance as part of the menu planning process and readily available and offered to residents during meal times.

    2. Alternate substitute foods and beverages will be hot for hot, cold for cold.

    3. Food Services may make substitutions as appropriate or as necessary.

    4. Any substitution in the menu will be noted to the Dietitian.

    5. All substitutions are noted on the menu, filed, and held for one month.
