Sarah Galletta is a long time resident of Hammonton. She is better known as "Aunt Sarah" to the people of this Pinelands community.
Sarah married Bill Galletta, a local farmer, who, with his brother began the Atlantic Blueberry Company. The company is now the largest blueberry producer in the world. Sarah often helped on the farm and enjoyed working alongside her husband. Over the years, she met and became friendly with many high school students who came to work on the farm and in the blueberry packing houses during the summer. The students, who became close to Mrs. Galletta, soon started calling her, "Aunt Sarah."
As the young wife of a blueberry farmer, Sarah had many luscious Pinelands Blueberries on hand and could experiment with recipes featuring the fruit. She found that with her children and others about, there was always someone waiting to taste the new creations. We hope you enjoy "Aunt Sarah's" recipe that has been a Galletta family tradition for years.
4 cups blueberries
1 cup sugar
3 tbsp. corn starch
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 cup water
1 tbsp. butter
In a saucepan mix ingredients except butter. Cook over medium heat stirring occasionally, until thick. Stir in butter and let cool.
4 tbsp. butter
4 tbsp. sugar
1 egg
1 cup flour
1/2 tsp. baking powder
pinch of salt
Mix ingredients into a ball. Roll out and put into pizza pan. Bake 325-350 degrees for 15 minutes.
8 oz. cream cheese
2 eggs
1/2 cup sugar
1 tsp. vanilla
1/3 cup chopped walnuts
Blend cream cheese, eggs, sugar and vanilla until smooth. Add nuts, and pour into half-baked crust. Return to oven for 13-15 minutes or until filling is set. Cool, pour topping over.
