Joan Hansen's Cranberry Bread
INGREDIENTS: Makes 2 Loaves of Bread
1 cup of vegetable oil
2 cups of cranberries, chopped
2 teaspoons of vanilla
2 tablespoons of cranberry juice
2 tablespoons of orange juice
2 cups of sifted all purpose flour
1/4 teaspoon of baking powder
2 teaspoons of baking soda
1 1/2 cups of sugar
1 teaspoon of salt
3 teaspoons of ground cinnamon
1 cup of walnuts, chopped
3/4 cup of flaked coconut
Beat the eggs lightly in a large bowl. Stir in oil, sugar, cranberries, vanilla, orange juice and cranberry juice. Sift flour, baking powder, baking soda, salt and cinnamon onto waxed paper. Stir this into the egg mixture until well blended. Stir in the nuts and coconut. Spoon the batter into wo well greased 8x5x3 inch loaf pans and bake at 375 degrees for one hour. Cool.
If you desire a glaze mix 2 tablespoons of sugar with 2 tablespoons of cranberry juice and dribble the mixture over the bread. Wrap and let set overnight.
