Production and Processing
Located in the Warren Hills viticultural area, a 226-square
mile section of the United States designated by the Federal
Government, Four Sisters Winery has been offering agricultural
education sessions since the early 1980's. Through their agricultural
education sessions, students will gain a greater understanding
of the processes involved in growing grapes on Four Sisters'
12-acre vineyard, as well as the mystery of wine making and
fermentation. Students will learn about the anatomy of a grape,
the structure of a vine, pruning techniques, vineyard nutrient
management, and canopy management. Grace Chang-Fuoti, a Four
Sisters' wine maker since 1996, will guide students through
an overview of the wine-making process, including: pressing
and maceration, de-stemming, use of the hydrometer and refractometer,
primary and secondary fermentation, composition and quality,
and filtration.
